You’ve seen it on the news or read about it on health websites: “gluten free foods,” but what does this mean?
Uno Chicago Grill, known for its delicious pizza and other tantalizing lunch and dinner specialties, has a gluten free menu especially for those with wheat allergies or celiac disease.
This diet is completely free of ingredients derived from gluten-containing cereals such as wheat, barley, rye and triticale, or gluten used as a food additive in the form of a flavoring, stabilizing or thickening agent. The diet also may exclude oats.
Some grains and starch sources are considered acceptable for a gluten-free diet and are featured in the pizza crusts at Uno Chicago Grill. The most frequently used are maize, potatoes, rice and tapioca (derived from cassava). Other grains and starch sources generally considered suitable for gluten-free diets include amaranth, arrowroot, millet, quinoa, sorghum sweet potato, taro and yam.
The Fruitland Uno Chicago Grill offers a tempting variety of gluten free items including their famous Cheese Pizza, Pepperoni Pizza and Veggie Pizza.
Pizza crusts are made from: gluten free pizza crust rice flour, filtered water, tapioca starch, potato starch, organic extra virgin olive oil, vegetable shortening (canola oil, hydrogenated cottonseed oil), sugar; contains less than 2% of the following: yeast, salt, eggs, gelatin, natural flavor, organic defatted soy flour, egg whites, leavening (sodium aluminum phosphate, baking soda), soy lecithin, xanthan gum, gum arabic, organic guar gum.
Other gluten free items available at UNO Chicago Grill are: Top Sirloin Steak, New York Strip Steak, Chop House Classic, Lemon Basil Salmon, Baby Back Ribs, Grilled Mahi-Mahi with Mango Salsa, Chicken Grilled Rosemary Chicken, Grilled Chicken with Mango Salsa, Grilled Chicken Breast, Classic Cobb Salad, Caesar Salad, Chicken Caesar Salad; Dressing choices: Balsalmic Vinaigrette or Caesar; The Uno Burger and Kid's Cheeseburger and for desert, Ice Cream Sundae (Vanilla ice cream w/ chocolate sauce). Many vegetable side dishes and beverages are also gluten free.

The article states: “…nutrition has become the word of the day with a completely trans fat–free menu and plenty of grilled entrees (including antibiotic-free chicken). Adding to the healthy variety: whole-grain pasta and brown rice, organic coffee and tea, and flatbread pizzas that have half the calories of deep-dish ones. In the lobbies of most of the restaurant’s locations, are Nutrition Information Centers detailing ingredients, fat and sodium contents, and calories and fiber of every item, in addition to gluten-free options.”
